Simply Bill

At last Bill Granger is getting bigger in the UK with his TV series screened earlier this year on the BBC, bringing him to a wider audience. Sadly the Saturday spot might not have caught everyone but with luck, a second series (if there is to be one) will be on a weekday evening.

Down to Simply Bill, Bill’s new book which is as good as ever is. Simple food prepared Bill’s way. It’s easy to cook, it’s unfussy and is a fusion of fabulous flavours that will send your tastebuds into orbit. Here you will find some of the dishes that he cooks with his eyes closed (well nearly) after a busy day in one of his restaurants, Bills and Bills 2. There are recipes for every day, lazy days, little days (with the kids in mind), pure days when you need to nurture the soul and special days.

What about making fish cakes and serving them with watercress and grapefruit with sliced radishes and capers. You can just taste the zing. Or cook an all in one dish, Giovanni’s sausages with potatoes and rosemary. Slice Italian sausages thickly as well as the peeled potatoes. Sprinkle over paprika and rosemary, toss some torn bits of ciabatta into the dish and drizzle with oil. Cook for thirty to forty minutes in a hot oven (Gas Mark 6). It’s that simple.

As for entertaining, he says don’t be afraid to buy in. Just make one or two dishes yourself. When he entertains, he likes to have all the dishes on the table at the same time so everyone can just help themselves.

Petrina Tinslay has done a great job once again on the photography, which are really fit for an award. They are sublime and with Bill’s sunny face looking out at you, you cannot help but be enthused by his delicious recipes.
